Soup Season is Upon Us, Y’all. Rejoice! (Wendy’s Super Fast 2 Point Chili)

It's nearly Fall, and Fall is always soup and chili season for me.  And, seriously, y'all--I love me some soup. (granted, I live in Alabama and it's frickin' 90 degrees outside right now, but I've decided to just IGNORE SUMMER.  Maybe it'll go away quietly then.)  Soup is filling, it warms my belly when it's chilly outside and it's really, really low in points.

One of my favorite things to do is to take use Weight Watcher's Zero Point Soup recipe as a base for all my other soup recipes.  I mean, hello?  ZERO POINTS.  That's fairly awesome for a bowl of soup in itself, and if you toss in a few extras--like Morningstar Farm recipe crumbles and a bit of chili powder--or curry power (YUM), you've got something totally different and delicious for just a few extra points or calories.

Another favorite go-to soup for me is the Hungry Girl The Whole Enchilada Chicken Soup.  Oh my hell, I love this soup!  Actually, my whole family loves it.  When I make a big pot, I wind up taking some to my mom, and I more or less wind up fighting my son for the leftovers.  It's really excellent--and if you're like me, you've been hoarding pumpkin since the Great Pumpkin Shortage of 2009 happened, so you've probably got most of the ingredients in your pantry right now.

But, I thought I'd share my chili recipe with you guys--it's super easy to make (which is great when you're in a hurry) and it's around 2 points for a big bowl.  I love to use WASA rye flatbreads instead of crackers for a really satisfying crunch, but you could use whatever floats your boat.  ;)

Wendy's Super Fast 2 Point Chili:

  8 oz canned kidney beans    
  16 oz canned black beans    
  16 oz Fire roasted diced tomatoes    
  8 oz Clear Vegetable Broth    
  16 oz Morningstar Farms® Frozen Burger Style Recipe Crumbles    
  1 small onion(s)    
  1 medium bell pepper(s) 

I throw this all into a pot and season it to taste with salt/pepper/paprika/chili powder/cumin.  I realize that's not much help, but I hardly ever use recipes for stuff, I usually just toss it into a pot and see what tastes best.  hahaha.

That sounds pretty easy, dude! I have a Turkey Chili recipe that is a bit more calorie-filled, but still super healthy. Lots of fiber, lots of veggies. I’ll totally post it. We definitely need to get some chili cookin’.

ooo…Turkey chili would be good.  I have to keep mine close to what Aaron thinks of as “chili” or he’ll be all “WHY IS THERE CORN IN MY CHILI???!! GAAAAAAAAHHH!”  hahaha.  It’s super fast and easy to make—and, I’m all about the easy.

My chili is my dad’s recipe. I don’t use a pressure cooker like he does, I usually go stovetop or crockpot, and I use ground turkey instead of cubed beef or whatever he used. But it’s gooood. 3 beans, ground turkey, lots of tomatoes, onion and peppers, chiles… nom nom nom.  Can’t wait until I’m well enough to eat it!

I am FUCKING FREEZING right now, so both sounds so good.  I had soup for lunch, but I don’t care.  I want chili.
